LAYERS BAKERY AND ORIGIN COFFEE TO LAUNCH A LIMITED-EDITION PASTRY

Calling croissant fiends and coffee lovers, this collaboration is for you. Launching on Monday 7th October for one month only, East London’s newest wholesale bakery and coffee shop, Layers, and speciality coffee roasters, Origin Coffee, have joined forces to create the Tonka Bean and Coffee Croissant. This limited-edition croissant is packed with bold flavours and will be served exclusively in the bakery as well as Origin’s London coffee shops at the British Library, Charlotte Road and Scoresby Street for one month only from Wednesday 7th October.
The croissant dough is made with both Origin coffee and ground to give it a distinct rich flavour and baked with coffee cream inside. The buttery pastry is then topped with tonka bean, black cardamom, and white chocolate cream for a complex and smoky, vanilla finish.

Bringing together like-minded companies with a shared philosophy and approach to sustainability, the flower-shaped pastry transforms one of the largest problems facing the wholesale bakery, into a brand new product. The collaboration, which celebrates a long-standing relationship, is cleverly combating food waste by using surplus coffee grinds in the leftover dough to create the croissant.

Layers’ Co-founder and Head Pastry Chef, Faye Weatherburn comments, “At Layers our ethos is to use the best ingredients we can get and we work with suppliers who have the same outlook on sustainability and quality. Origin has worked with us to set up the coffee shop and trained our baristas and also started to supply our baked goods in July of this year so it was a no-brainer for us to work together.”
